PROCESSING PROCEDURES Beef will be tempered and thawed as required per SOP-016. Beef will go through initial grind, and then undergo antimicrobial intervention per SOP-010. Ground beef will then be thoroughly blended. A bone collector system will be utilized to remove bone, cartilage, and heavy connective tissue during the final grind per SOP-007. Finished ground beef product must be ≥ 91% lean content. Product will be formed and then vacuum packaged with a green and clear film per SOP-032. All product is then metal detected per SOP-009, labeled and boxed for shipment per SOP-001.
